Daybreak
-
Dawn poured into a glass, amber and slow before it begins to sparkle.
Daybreak's maple, brown sugar, cinnamon, vanilla, and salt become a sparkling brunch cocktail built on bourbon or aged rum instead of bright citrus. The result is closer to a lifted Old Fashioned than a fruit spritz: warm, glossy, and gently effervescent.
Yields / Time: 1 cocktail · 5 minutes
Ingredients
1.5 oz bourbon or aged rum
0.75 oz Herbal Alchemy Daybreak Syrup
2 dashes aromatic bitters
Tiny pinch fine sea salt
2 oz chilled soda water
2 oz chilled dry sparkling wine
Ice
Cinnamon stick and expressed orange peel, for garnish
Instructions
Fill a spritz glass with ice.
Add bourbon or rum, Daybreak Syrup, bitters, and salt.
Stir briefly to chill and combine.
Top with soda water and sparkling wine.
Express the orange peel over the glass, discard or tuck it beside the cinnamon stick, and serve.
Alchemist's Note: The orange peel is aroma only. The drink stays centered on maple, brown sugar, cinnamon, vanilla, and salt.
-
The same first light, held gently, without the burn.

Ingredients
1 oz Herbal Alchemy Daybreak Syrup
0.5 oz oat cream, half-and-half, or whole milk
Tiny pinch sea salt
4 oz chilled soda water

Cinnamon and a small pinch of light brown sugar, for garnish
Instructions
Fill a glass with ice.
Add Daybreak Syrup, cream, and salt.
Stir until glossy.
Top slowly with soda water.
Garnish with cinnamon and a small pinch of brown sugar.
Alchemist's Note: Pour the soda slowly so the cream blooms instead of breaking.
