Daybreak
-
Morning arrives in amber folds, warm as a griddle and soft as vanilla steam.
There is a particular kind of light that finds the kitchen only in the first hour of the day, and this recipe lets Daybreak Syrup speak in its truest register: maple warmth, brown-sugar depth, cinnamon shadow, vanilla softness, and a finishing glint of salt.
Yields: 4 servings | Prep time: 10 minutes | Cook time: 15 minutes
Ingredients
1 cup whole-milk ricotta
1 cup all-purpose flour
2 tbsp light brown sugar
1 tsp baking powder
¼ tsp baking soda
½ tsp ground cinnamon
¼ tsp fine sea salt
3 large eggs, separated
½ cup whole milk
1½ tsp vanilla extract
1 tbsp unsalted butter, melted, plus more for the pan
For the salted maple butter: ½ cup Herbal Alchemy Daybreak Syrup, 3 tbsp unsalted butter, 1 tbsp light brown sugar, ¼ tsp ground cinnamon, ½ tsp vanilla extract, ¼ tsp fine sea salt
Flaky salt, to finish
Instructions
Whisk flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
Whisk ricotta, egg yolks, milk, vanilla, and melted butter.
Fold wet into dry.
Whip egg whites to soft peaks and fold in.
Cook ¼-cup portions on a buttered griddle for 2 to 3 minutes per side.
Warm salted maple butter ingredients until glossy.
Serve pancakes with warm sauce and flaky salt.
Alchemist's Note: The salt is not garnish alone. It sharpens the maple and brown-sugar notes.
-
